Hello friends, welcome to The Buzz! This month's recipe is tailored for a hot, Texas summer day: sweet, chewy, protein-rich peanut butter bars! The best part? These are no bake treats, so there's no need to heat up the house with your oven! Perfect as a summer afternoon pick-me-up or packed in a lunch box as school begins in the fall. As an added bonus, the ingredient list is only five deep.
You will need:
Next, measure out your walnuts and almonds. If you like a chunkier texture, you can leave them as they are. I wanted something a little finer, so I gave them a few quick pulses in the food processor. After you've gotten your desired texture, pour them into a mixing bowl.
Now add the oats and your choice of dried fruit; I chose a mixture or raisins, cranberries, blueberries, and cherries. These bars are very easy to customize to your snacking whims. If you want an extra dose of chocolate, you can add in some mini chocolate chips! Whatever you decide to add, mix these dry ingredients up well before the next step.
Peanut butter time! Spoon a generous 1 1/2 cups worth of Chocolate Peanut Butter & Honey into a microwave safe container, then microwave the peanut butter for one minute, stirring after the first thirty seconds. Spoon the warmed peanut butter into the dry mixture and mix thoroughly.
Grab your parchment lined pan and transfer everything from the mixing bowl into the pan, pressing down firmly to pack everything together, evening out the top of the bars. Now place the entire pan into your refrigerator for an hour, allowing the bars to set. Once an hour has passed, remove the pan and cut your peanut butter bars as desired.
